Project Summary:
With over 50,000 students, not including branch campuses, in attendance at Penn State University, there are dozens of food serving lines throughout main campus and many more at branch campuses. As a result, I have had the opportunity to be part of quite a few serving line renovations.
Project Highlights:
Serving line renovations have ranged from simple serving line cooking equipment change outs to the reconstruction of the entire serving line and food store.
Millstream Cafe (Monte Alto Campus)
This project was one of the more involved serving line renovations I have designed to date. At approximately 1,900 sq.ft., this project included the installation of 4 new exhaust hoods, serving line equipment and a self serve/walk-in beverage cooler. The addition of the 4 new hoods included 2 wall canopy hoods and 2 island hoods. The intention was to bring the actual grille style cooking out to the serving line to free up space and capacity in the kitchen. It also provided an americana feel to the line itself. We also provided a new decorative lighting design to present a more modern ambiance.
Blue Spoon (University Park)
This renovation provided the greatest amount of aesthetic and functional improvements of my serving line experience. At the time of design conception, this serving line/campus store was a cluttered over-stocked mess and lacked any discernible flow. The goal of our design was to provide updated equipment and lighting, and to create a better flowing open layout.
Simmons Serving Line (University Park)
Probably the most basic serving line renovations I've had experience with, this project involved a face lift and the installation of a new beverage counter. Our job was to design an under counter cooling system for the new beverage counter.
Mixed Greens (University Park)
This project consisted of equipment upgrades to turn a standard food serving line into an extensive salad serving line. We also provided new modern lighting fixtures and 3 large reach in coolers. Our original design included 4 remote condensers for the 3 reach in coolers and a reach in deli display, mounted on the roof top of the building. However, that portion was removed due to budget constraints.
Involvement:
My involvement in all of the above projects, except the Simmons Serving Line, included the design of all respective HVAC, plumbing and electrical work to be perfomed under the renovation and the associated working construction drawings. For the Simmons Serving Line project, I was only responsible for the HVAC and plumbing portions, as the electrical portion was done in house by Penn State. For all of the above projects it was also my resbonsibility to represent PBCI - Engineering at construction meetings to address any known issues or questions.
